Ynja is the co-owner and manager of Bake my Day. She is a young artist who accidentally got into the cake world. She moved to Denmark from Iceland in January 2017, intending to start her university studies - But her plans quickly changed when she became the owner of Bake my Day. Ynja is an environmentalist and has developed a passion for vegan cakes.
Ester is Ynja's co-owner, and mother. She is a children psychologist by profession, and works and lives in Iceland. She is a true super woman who always has her hands full. All the way from Iceland, she takes care of our finances and book keeping, while having her own psychology firm as well.
Abigail (Abbie) comes from the Farao Islands, and as a professional pastry chef she graduated as "Konditor" in the danish pastry school Zealand business college in 2016. She started working at Bake my Day after she participated in the danish pastry chef competition "Sukkertoppen" 2018. She is a talented sugar sculptor, and she's the one that writes beautifully on our last minute cakes.
Armalyn is a pastry chef, and our main baker and kitchen manager. She comes from the Philippines, and worked as a pastry chef in Abu Dabhi before moving to Denmark with her husband. She is hard working and passionate about her work. It's hard to find a better coworker than Armalyn. She is also the master behind our macarons!
Bake my day was started in 2015 by Agata Kozlowska. When Ynja moved to Denmark in January 2017, she started looking for jobs as a cake decorator because of her former position at Sætar Syndir, Iceland. She was a full time artist, but wanted a part time job so that she wouldn't have to stress about paying her rent in Copenhagen. So google led her way to Bake my Day. She applied, went for a test, and got the job. But it didn't end up actually happening, because Agata wanted a full time employee, and Ynja didn't want to take a job over her artist career.
A few months later...
Ynja received a message from Agata asking if she could help her with a few baking classes. Ynja said yes, and in continuation of that, Ynja got the news that Agata had decided to move to Ireland with her boyfriend, saying goodbye to her little cake shop. Ynja got obsessed with the idea of taking over Bake my Day, and having only just turned 21 years old, she convinced her mother, Ester, to jump straight in with her and buy the brand Bake my Day. A few weeks later she got a positive answer for renting a corner shop at Amager Boulevard 126 - started taking orders in February, and opened a dessert shop front the first of March. With enormous amount of hard work, Bake my Day has gone from two employees to six in less than a year.
Our team puts a great amount of time and effort into the design and finish of our cakes. We strive for making tasty and beautiful cakes for your special day. We love the impact a great cake can have on the atmosphere in your party. Half of us identify as Artists, and we love to create cakes that are a unique artwork - and absolutely love it when we get free hands to experiment and make your cake even more special.
We care for our planet
The owner of Bake my Day is a committed environmentalist - Her vision is to make Bake my Day as close to zero waste as possible. Bake my Day recycles all it's waste, and minimizes the usage of animal products in their recipes.
By giving discounts for those who bring their own coffee cup, or cupcake box - we also minimize the use of disposable packaging.
Although we strive to be eco-friendly, there are still many things that are yet to come. Rome wasn't built in one day, and Bake my Day didn't become Zero Waste in one day!
